Saffron Honey — Liquid Gold
The world's most precious spice, held in a lavender honey.
A slow, patient dry infusion: the honey dissolves the saffron's crocins and takes on a deep amber hue. Lavender honey, floral and calming, carries the saffron nobly — and supports a luminous, serene mood.
Ingredients
- 100 g raw lavender honey
- 500 mg saffron threads (about 250 threads)
Method
Cut the threads into three or four pieces to increase contact surface, without grinding them to powder — this keeps all the aroma. Soften the honey in a very gentle bain-marie, at 35-38 °C, the temperature of the hive. Bury the saffron in the softened honey, seal tightly and let it infuse for 24 to 48 hours at room temperature, away from light. The honey takes on a deep golden-amber hue.
The tip
A daily dose lives in about 12 to 13 threads. A spoon in a warmed tisane, a drizzle on an evening amaranth bowl, a glaze on roasted vegetables: saffron unfolds wherever sweetness calls it.
Where I find it
Always a raw, unpasteurised honey. Keeps for a year or more at room temperature, away from light. Glass jar.
