Raw energy balls

The raw, contemporary sister of the ladoo — fresh dates, nuts and superfoods, a dense fuel that fits in a pocket.

Where the ladoo plunges into Indian tradition and its spices, the energy ball is its raw, free version: no cooking, no obligatory spices, but a heart of fresh dates and nuts, and a little laboratory of superfoods. It is the fuel I slip into a pocket before a long walk or a session of creation.

Everything stays raw, below 42 °C: the nuts' enzymes, the fragile vitamins and the cacao's polyphenols pass through intact. No single nut carries all the amino acids, but sesame, cashew and hemp together make a complete protein. And depending on the mood, I take three directions: soft (lucuma, coconut, cashew, mango), middle (almond, lucuma, saffron, goji, freeze-dried durian) or strong (raw cacao, black sesame, cacao nibs, rhodiola, guarana). Each ball is composed the way we tune a mood.

Ingredients

  • 180 g fresh Mazafati dates (chilled organic aisle) or Jurassic Fruit fresh gourmet dates, pitted
  • 90 g soaked nuts (almonds, cashews or hazelnuts)
  • 2 tbsp raw cacao powder
  • 1 tbsp lucuma powder
  • 1 pinch of fleur de sel
  • By direction: baobab, maca, saffron, cacao nibs, or crumbled freeze-dried fruits (mango, durian, goji — Biovie)
  • To coat: raw cacao, grated coconut or freeze-dried fruit powder

Method

Pulse the soaked nuts in a food processor, keeping some texture. Add the fresh dates, raw cacao, lucuma and fleur de sel, then blend into a supple paste that holds between the fingers — adjust with one more date if too dry, a spoon of nuts if too sticky. Fold in the chosen superfoods. Roll into walnut-sized balls, then in the coating. Chill for half an hour.

The tip

The secret to an energy ball that is both unctuous AND keeps is fresh dates: Mazafati from the chilled aisle, or Jurassic Fruit's gourmet dates. With fresh dates and soaked nuts, count on 24 to 48 hours refrigerated; a drier version keeps several days. Lucuma is my stroke of genius — a very soft caramel-apricot powder that rounds everything without a sugar spike; baobab brings its bright acidity, raw cacao its depth, freeze-dried fruits their sparkle.
